Maple Mustard Pork Ribs with Marinated Cucumber Salad

Lip smacking good! A simple zippy marinade for roasting pork spare ribs paired with a simple cucumber and pepper salad.

Maple Mustard Pork Ribs

YOU NEED:

  • 3 lbs pork spare ribs cut into 2 or 3 rib sections
  • 1/3 cup maple syrup
  • 1/3 cup Dijon mustard
  • 2 Tbsp red wine vinegar
  • 2 Tbsp paprika
  • 1 Tbps chili powder
  • 2 Tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp salt

DIRECTIONS

  1. Combine all ingredients in a bowl and rub all over the surface of the ribs. Let sit for 30 minutes or overnight in a zip lock back.
  2. Preheat oven to 350F.
  3. Arrange ribs on a non-stick baking pan and cook for approximately 1 ½ hours turning over at the halfway mark. Any extra marinade can be used as a basting sauce.
  4. Let cook slightly then slice between the bones.

Marinated Cucumber Salad

YOU NEED:

  • 3 cups cucumber (look for the smallish Armenian varietal as they are especially tender and sweet)
  • 1 or 2 red bell peppers sliced thin
  • 2 Tbsp white wine vinegar
  • 2 Tbsp olive oil
  • ½ tsp salt

DIRECTIONS

  1. Combine all in a bowl and let sit for 30 minutes before serving.
